Whole-Wheat Waffles

Ingredients

  • 5 tbsp. unsalted butter
  • 2 c. whole wheat flour (½ white, ½ whole wheat)
  • 4 tsp. baking powder
  • 2 eggs
  • 2 ½ c. milk

Instructions

  1. Melt the butter and let it cool.
  2. In a large bowl, whisk together the flour and baking powder.
  3. In a small bowl, whisk together the egg yolks and milk.
  4. Add to the flour mixture along with the butter and mix until all the dry ingredients are wet.
  5. Using an electric mixer, beat the egg whites until stiff peaks form.
  6. Gently fold the egg whites into the batter.
