  • 1 lb (450g) chicken tenders or breast strips
  • 1 cup rolled oats (blended into oat flour)
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 egg, beaten

Instructions

  1. Preheat your air fryer to 380°F (190°C) for 3-5 minutes.
  2. Blend oats in a food processor until fine like breadcrumbs to make oat flour.
  3. Mix oat flour with Parmesan, garlic powder, paprika, salt, and pepper in a shallow dish.
  4. Dip each tender in beaten egg, then press into oat mixture to coat evenly.
  5. Place coated tenders in a single layer in the basket (batch if needed to avoid crowding); lightly spritz tops with olive oil spray.
  6. Air fry for 12-14 minutes total, flipping halfway and spritzing again for even crispness; check internal temp reaches 165°F (74°C).
