Ingredients

  • 2 cups (396g) sugar
  • 3/4 cups (63g) unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp kosher salt
  • 1 tsp espresso powder (homemade or store-bought)
  • 1 cup (227g) milk or coconut *milk substitute* (not canned coconut milk*)
  • 1/2 cup (99g) melted Butter
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3/4 cup (170g) boiling water

Instructions

  1. Preheat oven to 350°F\176°C
  2. Combine dry ingredients: flour, sugar, cocoa powder, baking powder, baking soda, salt, expresso powder. Mix until ingredients are well combined
  3. I'm a separate bowl mix wet ingredients: milk, butter, eggs and vanilla
  4. Combine wet and dry mixture ensuring dry ingredients are well incorporated. *Do not over mix* Consistency will be thick until water is added
  5. Slowly pour hot boiling water and fold with a spatula until water is well absorbed. Texture will change to more runny consistency
  6. Pour into pans of your liking. Works well with single sheet tray or split between 2 smaller baking trays. Baking time varies based on tray size: Splitting into 2 smaller trays approx 30-35mins 1 larger sheet tray approx 40-45mins. *Use toothpick method to check if done, should come out dry)
